I made a nice eggplant, tomatoes and French casserole of my cookbook Deon Lucas. I followed the recipe exactly as shown. It came out pretty well, though a bit too salty for my taste, because of salting the eggplant slices for attendrir.12 hours later, I watch FoodTV and Wolfgang made an eggplant and tomato casserole. The advice was great! I saw that I added too much salt to the eggplant (if I’ve rinsed), I had to add sugar to my tomatoes, breadcrumbs and my house would be blown into the furnace (saving me a stage).
